Brilliant Brussels sprouts are the golden ticket to warming roast dinners and nutritious Christmas dining this month!

Cultivated during the 13th century near Brussels, Belgium, this is where they derived their name.

Disliked by Brits for a long time, this fantastic crop has been vindicated as it’s dethroned as the UK’s most disliked food by olives! And rightly so, Brussels sprouts are truly a delight to grow and packed full of goodness.

A staple for our Christmas Day feast, you can’t go wrong with growing Brussels sprouts.

Crops should be ready from late autumn onward and available for picking on Christmas morning, fresh for Christmas dinner.

Sow outdoors between March and April in a sunny location for best results.

It’s worth digging in a slow release fertiliser or some organic matter before you start, so that soil is fertile.

When young plants are 10cm tall transplant them to a spacing of 60cm apart and be sure to firm the young plants in well to prevent the plants from rocking in the wind.

My top tip when growing is to mound soil around the base in September to support the plants.

When it comes to young brassicas, they’re beloved by many. Use a fine enough netting to stop both the pigeons eating the young leaves and the cabbage white butterflies from reaching the plants to lay their eggs.

The sprouts develop in succession from the bottom of the plant upwards so the lowest ‘buttons’ will be ready to pick first.

You will be able to harvest from November to February and freeze any stocks you can’t finish off—this will keep you going right into next spring with a stock of healthy sprouts that you can cook into your recipes.

Brussels sprouts are so versatile to cook with, there’s lots you can do with them. Partner them with cream and bacon and you’ve got a indulgent dish to die for, but they also work well as a healthy addition to meals too. Especially high in vitamin K, just over 70 grams can offer over 130% of your daily requirement. Plus, they’re rich in antioxidants, so they bring a boost for overall health to the dinner table too.

For a festive twist, add in roasted chestnuts alongside them and you’ll have two of your five a day in one dish!

But my favourite way to enjoy Brussels sprouts is with pistachios and pomegranate. Pan fry them with the pistachios and then add a pinch of salt and the succulent sweet pomegranate seeds for a salty/sweet treat that’s really special.

Parsnips are my veg of the month for November.

They’re a low-maintenance crop that’s really nutritious, tastes great roasted and adds flavour to warming soups and stews. Packed full of Vitamin C, potassium, folate and fibre, parsnips deliver a powerful hit of antioxidants and are much lower-carb than potatoes – so what’s not to love?

Pastinaca sativa, parsnips, are Umbellifers and in the same family of plants as parsley, cumin and carrots. They’re a long-stay vegetable which can be left in the soil all winter – frosts will only improve the flavour, making them taste much sweeter. As they’re slow-growing, you may want to just grow a few if you’re quite short on space, but I think the flavour is really worth the wait.

Start right, and you’ll be well ahead. Autumn is the time to get that cultivation done, ready for a spring sowing once the soil’s warmed up.

Root veg definitely need deeply-cultivated, free-draining soil without too many stones or the roots will distort, and you’ll have funny-looking parsnips!

They don’t like it too rich – so don’t add manure when you’re digging – and they need sowing in widely-spaced rows, half an inch deep and about 18” apart, so you can get extra use of the space by growing some tasty radishes or leafy salads in between.

If you’re container gardening, shorter-rooted parsnips such as ‘White Gem’ can be grown in very deep planters, or even an old dustbin with plenty of drainage holes drilled – they need plenty of room for the roots to grow straight down into the soil.

Your best bet for getting good results with parsnip seed is to buy fresh, prepare the seedbed well – they like a fine tilth – and don’t be in too much of a rush to sow.

If you can wait until the soil’s warmed up, in March or April, you’ll see better results. Germination can take 28 days, so you’ll need to be patient!

I like to use pre-sown seed tapes, they’re a brilliant way to sow veg which needs careful spacing in order to grow well, saving a lot of thinning out later on. Another easy way to grow parsnips is to germinate the seeds indoors, between layers of damp kitchen roll.

Once you see roots and shoots, transfer the whole thing into the garden. Space the seedlings 6” apart along the row, tuck the soil around them and pop cloches or fleece over for protection, until you can see those sturdy, true leaves pushing through.

Those sown between March and May will be fully grown from late October or November when the leaves start to die back – if you’ve planted a couple of rows, you can keep harvesting over Christmas and well into the New Year. If the ground is likely to freeze hard, preventing harvesting, you can lift the roots and store them in the bottom of the fridge.

Or keep those which are undamaged in the shed in wooden boxes, layered amongst compost or sharp sand.

Parsnips can be enjoyed boiled whole, as mini veg, before they’re fully grown—and this is a great way to thin the rows out without wasting any plants.

Hold down the soil around the neighbouring parsnips as you pull and water the row afterwards to firm the earth around the roots.

My favourite way to enjoy parsnips is in a spicy root veg mash – with carrots and sweet potato. Peel and cube all the vegetables and boil in lightly salted water, until tender.

Blitz or mash into a puree, season and add butter and chilli flakes to taste. It’s simply superb and packed with goodness!

As part of your Sunday lunch or even Christmas dinner, roast parsnips just can’t be beaten! Simply cut off the top and tail, scrub the skins or very lightly peel them and cut in half lengthways. Pop them into a pan of boiling water and cook for 10 minutes.

Drain until dry, then lay them on a baking sheet, season with a little sea salt, drizzle with olive oil and honey and pop them in a hot oven for 30-35 minutes, turning halfway through. These sweet crisp additions to dinner will be utterly delicious!

There are two main varieties of garlic, these include ‘Softneck’ and ‘Hardneck.’ Hardneck garlic is suitable for cold weather planting. If you get growing now, you could be harvesting your crops by July the following year.

To begin planting, you want to choose fully formed bulbs from your local garden centre. Start by breaking up the individual cloves, these can be quite tough. Push your cloves beneath fertile well drained soil, you can do this with your hands, making a cosy bed for your bulbs.

Make sure to push them right in and lightly cover with soil on top so no water can enter. Leave a 4-inch gap between each clove and choose a spot with plenty of sun. As with most bulbs, they don’t enjoy too much water so once planted they can be left alone to their own devices.

They can be grown in containers or straight into the ground, a super simple grower for your vegetable patch.

Hardneck garlic produce a small number of large cloves with a more intense flavour. These varieties are superb for a winter warmer meal, possessing a spicy aroma—great for adding to hearty soups and stews.

As a herb it makes for a great flavour enhancer and can be added to almost any dish, both raw and cooked. When cooking, be careful not to overheat as they have a tendency to turn bitter.

Try adding crushed or chopped cloves to smashed potatoes sprinkled with Parmesan cheese. With added herbs, such as parsley and thyme, these make for some powerful potato dishes.

Another benefit of adding garlic to your recipes is that, once crushed, garlic releases the active compound allicin, which is an amino acid. Several studies have found it to have the amazing ability to reduce inflammation and lower cholesterol. A very healthy herb indeed.
