    Pak choi has slowly come to be a supermarket staple in the UK, and for good reason. Known in some places as ‘Chinese cabbage’ or ‘bok choi’, this lovely little brassica has a flavour somewhere between a mild cabbage and spinach. If harvested young you can eat it raw, and it makes a superb addition to fresh salads. When mature it’s an absolute must for stir-fries and noodle soups. It’s also is a fabulous companion to just about any fish you can think of, wrapped up together in foil with some lemon and seasonings – it’s divine.

    As with all brassicas, pak choi is full of goodness. It is a good source of dietary fibre, protein, thiamin, niacin and phosphorus, and a very good source of vitamin A, vitamin C, vitamin K, riboflavin, vitamin B6, folate, calcium, iron, magnesium, potassium, and manganese.

    As a garden vegetable they have great versatility; they can be harvested as a cut-and-come-again crop (CCA) or you can wait and harvest the whole thing as a mature plant. They are also great for container growing if you are low on space, because they are shallow rooting. When choosing your seeds, it’s good to remember that green-stemmed cultivars are generally tastier than white-stemmed varieties, although both are still lovely.

    Sowing

    You can start sowing your pak choi in April and carry on through July or August. In warmer parts of the country you can grow in partial shade, but as you move north you will need a full sun position. Earlier and later sowings grown for baby leaf can also be made under cloches or fleece in mild areas.

    You will want rich, moist soil that is firm, with plenty of well-rotted compost dug in. Sow your seed thinly, 2cm (¾in) deep, in rows 30-38cm (12-15in) apart, depending on your variety. Within the row space your seed 15cm apart for small varieties, 20cm apart for medium-size and 35cm apart for large.

    Growing

    Gradually thin seedlings to 7.5-10cm (3-4in) for baby leaf, to 20cm (8in) for semi-mature plants and to 25-30cm (10-12in) for mature plants. The thinnings are tasty, so throw them into a fresh salad rather than the compost bin.

    Letting your pak choi dry out will lead to bolting and poor flavour, so water when needed to keep the soil moist through the growing season. Because of their shallow roots they do better with little and often rather than an occasional drenching.

    If you have given them good soil then they shouldn’t need fertiliser, however it wouldn’t hurt to side dress crops with compost again around mid-season.

    All the usual brassica pests can be a problem, so it’s a good idea to surround stems with a 10cm (4 inch) mat with a slit cut into it to prevent cabbage root fly from getting at the roots. Using fine mesh or fleece over the summer will keep other insects at bay too.

    Harvesting

    A CCA crop can be harvested at any stage from 4-13cm high. This may only take three weeks, and two or three further harvests should be possible during the season. A mature, headed crop takes around six weeks and can be lifted entirely, or cut 2.5cm above ground level and left to resprout.

    Pak choi won’t last long in the fridge – usually a week at best. However it can be blanched and frozen for long term storage.

    • Pak choi has been known by its Chinese name since at least the fifth century, but seeds have been discovered by archaeologists that could be pak choi dating back 6000 years.
    • Pak choi sometimes called a “soup spoon” because of the shape of its leaves.
    • One cup of cooked pak choi provides more than 100% of the recommended dietary allowance (RDA) of vitamin A.

    • Joi Choi: Is slow to bolt and has good frost resistance.
    • F1 Hanakan: Compact, slow bolting plants with round smooth leaves and thick pure white stalks.

    The origins of kohlrabi are a bit of a mystery, it’s true. From what we can tell it is actually one of our newest vegetables, with reliable references to it only beginning 500-700 years ago. We do know it is one of northern Europe’s only homegrown vegetables. As part of the brassica family, it is descended from wild cabbage, along with other table favourites like Brussels sprouts, broccoli, cauliflower, and kale.

    Kohlrabi has a milder and sweeter taste than you would expect from its slightly alien appearance. It is wonderful roasted and crispy as a side to your joint of beef; you can grate it into a light summer coleslaw; it brings a sweet contrast to a rich and spicy curry; or it’s even great just sliced thinly and eaten raw in your lunchtime sandwich or salad.

    Like all brassicas, kohlrabi are packed full of nutrients and minerals such as copper, potassium, manganese, iron, and calcium, as well as vitamins, such as vitamin C, B-complex vitamins, vitamin A, and vitamin K.

    Eating it will lend support to many important bodily processes such as good digestion, circulation, vision health, bone strength, nerve function, and more. It’s simple: kohlrabi is good eating.

    And besides all of that goodness, it’s really easy to grow at home. It is hardier than most brassicas, more disease resistant, and can be as little as 10 weeks from sowing to harvesting. So, bottom line, there really is no excuse not to have kohlrabi in your garden this year.

    Sowing

    If you are sowing under a cloche you can start in early March usually, and you can continue sowing from mid-August to early-September, depending on what part of the country you live in. Sow every few weeks for a continuous crop.

    Kohlrabi likes a sunny spot best, but can cope with dappled shade. They will be happy in a light, fertile, free draining soil. If using a cloche, put it in place a week before sowing to warm the soil, and to avoid disease don’t plant where other brassicas were grown last year.

    To prepare your bed, dig in plenty of well-rotted organic matter, bring the soil to a fine tilth, and then rake in some general purpose fertiliser. If your soil is quite acidic you will need to add lime a few weeks before sowing, or otherwise grow in containers. Kohlrabi is smaller than most brassicas and can live in shallower soil, so it does well in raised beds and containers.

    Sow seeds, 1cm (½in) deep in rows 30cm (12in) apart, cover and water.

    Growing

    Weeding is important, especially when the plants are young. Weed by hand to avoid damaging the root of your young plants, and using a mulch between rows can help a lot.

    Although kohlrabi are more drought resistant than most brassicas, the flavour and texture will suffer if they dry out. Water regularly, especially before the onset of a drought, if you don’t want tough, woody stems.

    Pigeons can be a problem with young plants, so netting or fleece is a good idea, and it will also protect from cabbage root fly.

    When seedlings are 2.5cm (1in) tall, or the first adult leaves appear, it’s time to start thinning them. You should aim to leave a final spacing of 15cm (6in) apart.

    If your soil is really poor apply more fertiliser halfway to harvest. A liquid fertiliser may be easier to apply at this point, but if you want to use a granular type just tickle it into the surface of the soil with a hand fork.

    Harvesting

     Start harvesting when the swollen stems of your plants are golf-ball size, but leave most of them to grow. There are a couple of cultivars, such as Gigante and Superschmelz, that can grow to huge sizes without losing their flavour, but for most varieties be sure to harvest them by the time they are tennis-ball size or they will become woody and hot-flavoured.

    Pick some of the young leaves to throw into salads and stir fries, but never take more than a third of the foliage. Adult leaves will need to be cooked to eat as they become tougher.

    Your kohlrabi stems can be harvested from May through to mid-December, though you may want to bring the cloches back out in mid-October to speed the final crops along. Purple varieties are hardier, making them better for later in the year.

    Quirky Tip

    • Wrapping kohlrabi in a damp towel in the fridge will help it keep for up to two weeks. Otherwise it will usually last less than a week.

    Fun Facts

    • Most people think that kohlrabi is a root vegetable, but it is actually the swollen stem that we eat.
    • The name kohlrabi actually means cabbage turnip in German, as it descends from cabbage and the bulbous stem that we eat looks a bit like a turnip.

    Here in Britain, when most of us think of cauliflower we think of it smothered in cheese sauce next to your Sunday roast.

    World Famous

    Personally, I like to cover my cauliflower cheese in paprika and ground black pepper and bake it off in the oven to give it that crispy edge. Delicious. But cauliflower has so many more uses around the world. In Eastern Europe they have these wonderful traditional cauliflower soups. Whilst in Italy they create marvellous pasta dishes with it. And in India there are some mouth watering cauliflower curries that will blow you away.

    Blended down and mixed with egg and cheese, it can even be used as a substitute for a pizza base! Which is great if you’re gluten intolerant (or you’re just cutting down on the carbs).

    Super

    Of course, being part of the brassica family which includes cabbage, broccoli and kale, cauliflower is extremely nutritious, and often labelled as a ‘superfood’. It’s packed with vitamins C, K, and B6.

    It also contains folate, choline, omega 3 fats, and is full of antioxidants such as manganese. That’s just scratching the surface of this little white gem of a veggie. Caulis are a superb food to keep you and your family healthy.

    Sowing

    Your main sowing period with cauliflower is March to May, but you can start them earlier if you sow them indoors or under glass. You can sow directly outdoors. I recommend starting them off in modular trays inside. This will usually get better results, and you’ll have a much better chance of avoiding certain pests and diseases.

    How To

    Rub the compost through your fingers when filling the tray to break up any lumps. Then give the tray a sharp bang on the table to settle it. Sow 1-2 seeds per tray, about 1.5cm deep (about a fingernail depth). If 2 seedlings sprout then pinch off the weaker one (don’t pull it out or you will damage the roots of the other seedling). Gently water in with a fine spray so as not to move the seeds around.

    Place your trays in your greenhouse, poly tunnel, cold frame or windowsill to germinate. When you sow early in March or before you will need a propagator, heat mat or a warm south facing windowsill to add some warmth.

    Growing

    When it comes time to transplant them outside, choose a spot with full sun.

    Caulis love rich, deep soil, so dig in plenty of well rotted compost/manure and around 150g per square metre of general purpose fertiliser. It’s best not to use soil that has grown other members of the brassica family in the last couple of years.

    Firm

    Cauliflower do need firm soil too. Firm it up by walking over it just before transplanting your seedlings in. Then water very thoroughly. Plant around 60cm apart and with a 60cm row gap. Make sure you firm the soil very well against the roots once they are in. The hole needs to be deep enough to hold the plant with the lowest leaves at ground level.

    Once your cauliflower is growing, a slow release, high nitrogen fertiliser will help them out greatly every 4 weeks or so. Do not interupt their growing cycle. If that happens you will get small, deformed heads. Keep them well watered during dry periods to prevent that from happening.

    Harvesting

    If you planted a number of cauliflower it’s a good idea to start harvesting some of the small ones while you’re waiting for the rest to mature. Otherwise they will all be ready at the same time.

    Cauliflower don’t store well. So you will end up with a bin bag full of wasted heads. Cut it off at the base of the plant and keep the leaf wrapping intact. If the florets begin to separate then you’ve already waited too long.
